Description
Rhubarb (Rheum rhabarbarum) is a perennial plant with long, crisp, fleshy, and glossy stalks.
The leaves are large and triangular-shaped. Harvesting begins in June, with the option of a second harvest in late August.
Traditionally the rhubarb stalks are used in Iceland for making caramelized jam, pies, and porridge. It is prized for its rich mineral content. In simpler olden times, a tender stick of rhubarb dipped in sugar, was a common and affordable sweet for the children of Iceland.
