Dulse / Söl
The red alga Dulse (Palmaria palmata), has been eaten centuries by humans living along coastlines of the northern Atlantic. Dulse is sustainably handpicked during the best blossom time in the pure Icelandic nature, without harming the environment. It has been given the name Palmaria because the seaweeds blades are sometimes split into sections appearing like the fingers on a hand. Dulse is pleasantly salty and with a nut-like taste.
Dulse dried and ground is excellent for seasoning soups, salads, sauces, breads and relishes. Dulse can be placed on a hot pan with oil or butter and fried until the pieces become crispy – a great vegetarian substitute for fried bacon. Ideal for sprinkling over seafood and margherita pizza, fish soups and fish casseroles.
Dulse has a relatively high protein content, typically more than 20 %, and is also high in iron, fluoride, potassium, iodine, phosphorous and vitamins B6 and B12.
